If you're one of those that likes to plant your own garden, unless you scatter your planting times, it seems all the vegetables ripen at once and you find yourself wishing that you could have a fresh crop all year long. Well you can, or almost. I don't mean that time consuming chore of canning; I mean freezing. You can freeze almost anything. Just get yourself a supply of zip lock freezer bags and get to work. I never thought you could freeze green peppers until a friend of mine told me how. I did it and it works, so here goes.
Wash peppers and slice off top. Pack in freezer bags and store in freezer. Use for stuffed peppers or in any recipe that calls for chopped green pepper.
Below is my own recipe for stuffed green peppers. You will have to judge on the quantities. Enjoy.
STUFFED GREEN PEPPERS
Make a mixture of ground beef, rice partially cooked (I personally use brown rice as it is healthier than white), an egg, chopped onion, salt and pepper. Fill green peppers with mixture and place in crock pot. Cover with stewed tomatoes. Add a couple of beef bouillon cubes for added flavor. Cook in crock pot until done.
PRESERVING FRESH JALAPENOS
Wash jalapenos and remove stem if desired. Pack in jars of leftover dill or kosher pickle brine or make your own out of vinegar, minced garlic and pickling spices. Will keep in refrigerator for quite some time. Can be used in most any dishes.
